Peru’s Central crowned the Best Restaurant in South America

Lima-based Central —owned by Peruvian chefs Pia Leon and Virgilio Martinez— has been named the Best Restaurant in South America, according to The World’s 50 Best Restaurants 2021 ranking.

In addition, Central is ranked fourth on The World’s 50 Best Restaurants list, while Maido, —another Peruvian restaurant— holds the seventh place on said list.

According to The World’s 50 Best Restaurants, Central’s plates are groaning with incredible biodiversity, and the restaurant features Peruvian heritage plated to perfection.

“Chefs Virgilio Martinez and Pia Leon’s flagship restaurant, Central, is an ode to Peru in all forms,” it stated. 

“While the menu represents Peruvian ecosystems at their best, the team at Central focuses strongly on sustainability. Recycling, composting, and closing the loop on waste ingredients all come second nature,” it remarked.

On the other hand, The World’s 50 Best Restaurants highlighted the fusion of the chef’s Peruvian and Japanese backgrounds at Maido —a restaurant helmed by Mitsuharu ‘Micha’ Tsumura.

“Peru and Japan come head-to-head to create an explosion of fantastic flavor,” reads its description.

As is known, Peru’s Pia Leon was named the World’s Best Female Chef 2021, and she received her award at the gala that The World’s 50 Best Restaurants hosted in Antwerp (Belgium) on October 5.
